Menu Plan


Let's call this the Easter Dinner Leftover Edition.

Just so you can understand where I am starting from, we did a Ham dinner with Potatoes Au Gratin (I way over estimated on the potatoes and wound up making 2 full casserole dishes), Shrimp Cocktails (I know, not frugal but yummy), tossed salad and a couple of other side dishes that were contributed by family members (an thusly taken home-no leftovers from them).

Monday-Ham, Potatoes Au Gratin, Salad

This is just straight up leftovers-nothing done to improve or change anything. Buddy is sick, Yankee Bill has to head out early for a meeting, and I'm tired from all the stuff yesterday. So I'm going the easy route.

Tuesday-Shrimp Stirfry and Rice

There are about 9 jumbo shrimp leftover. Chopped up and added to frozen stir fry veggies and some of the humongous head of cabbage I bought last week and it should make enough for us with generous portions of rice to help it along.

Wednesday-Pea Soup, rice and bread

Ahhh, the ham bone's best incarnation. Sometimes I eat ham just to have the bone for soup! I'll make it with a $.98 bag of dried peas from Aldi's, the ham bone, a bit of potato (scooped out of the au gratin) a carrot and some broth. Oh, and some of the small shreds of leftover ham. All this will cook in the crockpot all day, so it will be ready to go after our busy day of running around. We'll use the leftover rice and some homemade bread to round it out.

Thursday-Experimental Potato Pancakes, Applesauce and veggies.

I've got a ton of Potatoes Au Gratin left, so I'm going to try chopping it up in the food processor, adding a bit of egg and flour and making fried potato pancakes. If there is any salad still left (I'll be eating it at lunches too) then I'll have that as a side. Otherwise we'll crack open some canned veggies to go with. Applesauce is the traditional side with potato pancakes-I'll probably use jarred, but might get fancy schmancy with the apples that are starting to wither in the basket on the counter.

Friday-Pizza Night

If there is still some ham, then I might try some ham and pineapple. Otherwise I've got the pepperoni in the freezer and of course plain old cheese

Saturday-Biscuits and Gravy

There is some venison sausage I defrosted and fried up a few days ago for another recipe. I'll toss that in the freezer tonight to keep it, and then on Saturday I'll defrost it and throw it into some white gravy and pour over biscuits.

Sunday-Roast Chicken, Broccoli and Southern Batter Bread

I think we'll be sick of Ham by Sunday. If there is any left, it's getting thrown in the freezer. The spoon bread is from Hillbilly Housewife. I made it once before and it was pretty good-it was more like a Yorkshire Pudding, or a stuffing. I'm just trying to shake things up from the "rice, noodles, potatoes" routine.

I love the idea of the potato pancakes! I usually use up our cheesy mashed potatoes as pancakes-I just smash them together and fry with some butter until they are golden brown-oh yum!!

Hmmm, Nana took us out for Pizza lunch due to a snow day on Fri, so I did leftovers for dinner instead. Otherwise I've actually stuck to this pretty closely.
